A mix of simple ingredients are tossed together in this lovely egg salad. Serve with a sandwich or on some crackers for a light and filling lunch!
Peel and chop hard-boiled eggs and add to a small mixing bowl.
Finely chop red and green onion and add to egg in small mixing bowl.
Add Greek yogurt to egg and onion mixture. Feel free to add more if you'd like!
Season with salt and pepper to taste and cover. Let rest for a few hours or overnight to let the flavors mingle!
Serve on sandwich thins, crackers or whatever you like! Enjoy!
