THE Ultimate Grilled Pizza Recipe

Hi Friends!

If you follow my meal plans you will notice a constant – Friday night pizza!  It’s a great way to unwind after a long week and Baby A definitely has come to expect it.

This recipe was born a couple of years back.  It was a hot summer Friday night and I wanted to make pizza since we had the dough in the fridge.  It has taken me some time to perfect, but I’ve passed this grilled pizza recipe on to family and friends and they’ve all raved about it.  A few simple ingredients and an easy grill technique makes this THE Ultimate Grilled Pizza Recipe!

THE Ultimate Grilled Pizza Recipe

Combining two of my favorite things, pizza and grilling, this recipe certainly rivals some restaurants!  Crispy and garlicky, these flavors melt together so nicely your family will beg you to serve this weekly!

Course Main Course
Cuisine Italian
Servings 3

  • 1 lb pizza dough
  • 1/2 cup marinara sauce or more to taste
  • 2 cloves garlic minced
  • drizzle olive oil
  • 1/4 tsp oregano
  • 1/4 cup Parmesan cheese grated
  • 1/2 cup mozzarella cheese shredded

  1. Place pizza stone on grill and turn grill on high to heat the pizza stone up to a nice hot temp.  I like it to be around 500 degrees Fahrenheit!

  2. While the grill is heating, prepare the pizza. Roll out the dough on a lightly floured surface to the desired dough thickness. Place dough on a piece of parchment to prevent sticking to the pizza stone.

  3. Poke dough with a fork to prevent bubbles in the dough and then cover with marina sauce and minced garlic. Drizzle pizza with olive oil and then sprinkle oregano and Parmesan over top.

  4. When grill is heated place parchment paper with prepared pizza on the heated pizza stone and close lid. Let cook for a couple minutes, open lid and take a spatula to slide the parchment paper out from under the pizza. Close lid of grill and discard parchment paper. Allow pizza to continue cooking until Parmesan is melted.

  5. After Parmesan has melted (approx 3-5 minutes) spread mozzarella cheese over the top of the pizza and close the lid to allow the pizza to cook thoroughly. Make sure to check on your pizza every couple of minutes so it doesn't overcook. You can use a spatula to check under your crust and make sure it is crispy and cooking. Once you're pizza is done to your liking remove from stone onto the grill to release steam and create grill marks. Again, make sure you keep checking your crust to make sure it doesn't burn!

  6. Remove pizza from grill and enjoy!

Recipe Notes

  • Make sure to take pizza dough out of fridge 20-30 minutes prior to cooking.  I've noticed allowing it to rest outside the fridge makes it a little easier to stretch.
  • You don't have to use a pizza stone if you don't have one.  My brother-in-law prepares his pizza directly on the grill.  I'd still use parchment paper so it doesn't stick to the grates, it makes cleanup so much easier, especially on a pizza stone.  Trust me, without parchment paper the pizza stone becomes a mess and it is so hard to clean!
  • This recipe also works well in the oven, just preheat the oven to 450 degrees Fahrenheit!  Make sure to put the pizza stone in the oven during preheat to get it nice and hot!
