Hi Friends!

How is your week going?  Mine has been flying by with all fun, busy things!  Are you excited for Halloween?  I know my kids are super pumped – Baby G keeps babbling and pointing at his little pumpkin costume…it is really the cutest thing ever!  Baby A will be Sophia the First and can’t wait to wear her amulet!  Oh, the innocence and sweetness surrounding these two 🙂  This is truly a fun time of year!

This morning before weigh in I opened my fridge and saw two lonely hard-boiled eggs staring me in the face.  What’s a girl to do, but prep a healthy, delicious lunch!?  I think that prepping this morning and putting in the fridge really helped mix all those delightful flavors together.  I was super happy eating this sandwich today and couldn’t wait to share with you!  As I’ve mentioned in my weekly meal plans, I’m on a mission for healthier eating and losing the last few pounds of baby weight.  So this recipe is easy, delicious, and if you’re counting weight watchers freestyle points – 0 points!

One quick thing, if you’re unsure of how long to hard-boil your eggs (like I was!) you can head on over to Amazon and check out this egg timer.  I was never sure and always had that grayish yolk because of it.  This thing tells you when your eggs are cooked perfectly EVERY. SINGLE. TIME.  I can’t rave about it enough – you can see how gorgeous the yolk is in the photos 🙂  Here’s what the timer looks like and it changes color as it cooks to show you it’s done.  Easy peasy!

Without further ado, here’s the recipe…

Delightfully Delicious Healthy Egg Salad

A mix of simple ingredients are tossed together in this lovely egg salad.  Serve with a sandwich or on some crackers for a light and filling lunch!

Ingredients

  • 2 Eggs hard-boiled
  • 1 tbsp Red Onion finely chopped
  • 1 tbps Green Onion finely chopped
  • 1 tbsp Non-fat Plain Greek Yogurt
  • Pinch Salt & Pepper

Instructions

  1. Peel and chop hard-boiled eggs and add to a small mixing bowl.

  2. Finely chop red and green onion and add to egg in small mixing bowl.

  3. Add Greek yogurt to egg and onion mixture. Feel free to add more if you'd like!

  4. Season with salt and pepper to taste and cover. Let rest for a few hours or overnight to let the flavors mingle!

  5. Serve on sandwich thins, crackers or whatever you like! Enjoy!
