Happy Sunday!  C2K is back with another Family Friendly Meal Plan and this one is amazing, I promise!  You’ll probably notice that I’m trying to “lighten” up things a little – I’ll be writing about that in another post – losing the baby weight!  I may be trying to lighten up, but no sacrificing flavor, I promise!

Meal Plan:

Monday –  Weight Watchers Beef and Broccoli from Simple Nourished Living.  I’m pretty sure I’ve mentioned in a previous post “the recipe you want to share with all of your friends” because it is THAT GOOD? Yes, friends, this is one of those recipes!  Simply?  It is AMAZING.  I love it so much that I will likely be making this recipe multiple times a month…especially when I’m craving takeout.  It’ll satisfy that craving without blowing your quest for healthy eating (let’s never use the “D” word…)!  Trust me, you won’t be disappointed!

Weight Watchers Beef and Broccoli

Tuesday –  Instant Pot Chipotle Chicken Tacos from Dash of Herbs.  With Baby A in school, I tend to love recipes that require as little work as possible and still taste amazing!  I usually prep everything during Baby G’s afternoon nap so dinner can come together in, quite literally, the push of a button.  If you don’t have an Instant Pot (<– this links to the exact one I have and 100% recommend) you should definitely check it out!  For me it has been a life saver and really helps makes meals come together in a pinch!

Wednesday – All Italian families need to have pasta at least once during the week, right?  I mean come on Wednesday is Prince Spaghetti Day!?  Who knows what I’m talking about?  🙂  Anyway, this week’s pasta dish is 21 Day Fix Instant Pot Lasagna from My Crazy Good Life.  I do want to put in a side note for this:  I used the modified version of this recipe for the oven and made this in an 8X8 pan.  It came out great!  The reason I did this was because I prepared everything while Baby A was at school and popped in the fridge until I was ready to bake.  Also, Baby A and Baby G aren’t lasagna fans…so, this is one instance where I’ll put some on their plate along with plain pasta and vegetables.  I like them to have access and at least try what I’ve made for dinner!

Thursday –  Ok, for us, we will certainly have leftovers from the lasagna since Baby A and Baby G would prefer plain pasta to lasagna.  If you don’t have leftover try something easy like this Apple Cheddar Turkey wrap from Emily Bites.  Because sometimes it’s just nice to do something quick and easy…and if you’re like us and have a TON of apples from the orchard this is a great recipe to try!

Friday – Pizza from our favorite local pizza place! Or try this grilled pizza recipe!
