Family Friendly Meal Plan for the week of October 22, 2018
Happy Sunday! How has your week been? Ours has been a little hectic, but fun! Among all of our activities, Baby A had a pasta dinner at her school last night. It was so much fun meeting other parents at the school and getting to know some of the parents of her classmates. Baby A’s older cousins also attend the school, so she had a lot of fun hanging with them as well 🙂 I thought she’d pass out when we got home, nope, she was wired…and still woke up at 7 am!
If you’re still stumped about what to feed your family this week, I’ve got a plan for you! This is a pretty yummy one, PLUS, if you buy things pre-prepped (or prep in advance) it’ll come together lickety split! I’ll admit I was a little lazy and bought stir fry chicken and stew beef cubes to make it easier on meal day! It was a similar price per pound and it just made my life a little easier. You’ll notice that we had leftovers on Thursday…we had so much food it was a sin to make another meal! I’m hoping your family is able to eat the leftovers from the week as well!

Monday – Sheet Pan Chicken Fajitas from Cooking Classy. This is one of my all time favorite quick recipes. It comes together so easy, especially when you prep ahead of time. Just toss this baby in the oven and let it cook…plus it is AWESOME leftovers! You’ll definitely want to add this to your arsenal of recipes!
Tuesday – Instant Pot Healthy Beef Stew from Slender Kitchen. I’ve raved about my Instant Pot before and I’ll definitely stand by my reviews! The Instant Pot is a fantastic kitchen tool to have. This thing makes a tender beef stew in a fraction of the time it would take conventionally. I will admit that my stew broth didn’t come out super thick, but that was okay by me. The flavors were amazing and this was a GREAT weeknight meal to have with a little crusty bread on the side!
Wednesday – Light Shrimp Scampi from Grandbaby Cakes. I love shrimp, I love spaghetti squash, I love this recipe! I make pasta for the rest of the family, and mix in the spaghetti squash and shrimp to make it a little more appealing for the kiddos, but I love this yummy, garlicky recipe just as is! Seriously, give it a try for a nice, light meal!
Thursday – Today was leftover day. We had so many leftovers from the week and needed to clean out the fridge in the worst way! I’m hoping you get the night off as well! If not, give this Weight Watchers Meatball recipe from Quick Family Recipes. I raved about this recipe last week and I’ve made it twice…plus have some in the freezer for a super quick meal. Toss this on some nice rolls and you’ve got yourself a quick meatball sub!
Friday – Pizza from our favorite local pizza place, or try this grilled pizza recipe! If you don’t want to roll out your dough, or like a super thin crust, I bought the Brooklyn Bred Company thin crust pizza crusts at our local grocery store last week. These are pretty good and come out nice and crispy!
