Family Friendly Meal Plan for the week of October 15, 2018
How is everyone’s weekend? I hope you’ve all made some wonderful fall memories with your families! We’ve had a rather low key weekend given the weather here wasn’t so great. It has gotten so cold so fast!
Truth be told, I do my meal plans one week ahead of posting. The reason for this is to make 100% sure I love the recipes! I would never recommend a recipe we didn’t like or that my family wouldn’t eat (same goes for any products I recommend on my blog! I’d never ever recommend anything I didn’t approve of 100%!). Anyway, last week was seasonably warm here in the Northeast so you’ll see a Cobb Salad on the meal plan. This salad is SO GOOD and depending on the dressing you use (I just mist olive oil and a bit of balsamic vinegar) it can be as little as 3 Freestyle points for a HUGE dinner salad! I love Cobb Salad and hope you like my version of it! Other than that the meals are SUPER good! The meatballs were awesome, my husband gave it two thumbs up!

Monday – Homemade Chicken Noodle Soup from Budget Bytes. My family LOVES this recipe, I mean LOOOOOVES this recipe. IT.IS.SO.GOOD! Trust me, if you like chicken soup, you’ll love this one! This from scratch recipe comes together so quickly and leftovers are delicious!
Tuesday – Another one of our favorites is this Baked Shrimp Scampi from Damn Delicious. Good Lord! This recipe is literally elegant and delicious enough to have for a dinner party or family gathering, but so easy that there’s no excuse to not make it on a weeknight! I usually serve ours with rice (pilaf, typically) and roasted broccoli or cauliflower. It’ll feel like you are dining at a nice restaurant, I promise!
Wednesday – Super Duper Delicious Cobb Salad from Corporate to Kiddos! This is a hearty, filling dinner salad that will leave you satisfied! Add some garlic bread on the side for a yummy, complete meal! Prep some of the ingredients ahead of time – the hard boiled eggs, chicken and wash the greens – and this will come together for you really quickly!
Thursday – Weight Watchers Meatballs from quickfamilyrecipes.com. I tried these on a whim, thought to myself “hmmm, worth a try for 1 point each!”. Guess what? They are unbelievably AWESOME! I actually made a few more than the recipe called for and threw them in the freezer. The family loved these meatballs and this dinner was a total hit! I served this with some angel hair pasta, quick home made tomato sauce and roasted broccoli and it was amazing! If your family loves spaghetti and meatballs they’ll certainly devour this recipe!
Friday – Pizza from our favorite local pizza place! Or try this grilled pizza recipe!
