So bear with me a little here.  I really love to cook for my family and truth be told I don’t care for leftovers.  I know it’s silly, right?  I’ve got two small children and don’t like leftovers…well, this week is going to be another HOT one and I’ve decided to give leftovers a try.  I looked in my freezer to see what was in there and right in front of me was a nice pork roast.  So, I have found an Instant Pot recipe that got great ratings and decided to give it a whirl!  This week we’ll have tacos on Taco Tuesday with said pork recipe, and then on salad for Thursday “clean out the fridge day” 🙂  Let me know what you think about leftovers!  I may be turning over a new leaf 😉

MondayThe Best BBQ Chicken Kebobs from fabulesslyfrugal.com served with these yummy Garlic Parmesan Broccoli and Potatoes in Foil from damndelicious.net.  Easy? Check!  No cooking inside the house? Check!  Healthy, hearty meal in a few easy steps? Absolutely!

Tuesday – Taco Tuesday never looked so good as it does with these Pressure Cooker Carnitas from Bunsinmyoven.com!  Ok, this does require using the broiler for 5 minutes, but it TOTALLY looks worth it!  Am I right?

You're going to love this easy Instant Pot recipe! These pressure cooker carnitas are ready in about an hour and are so good!

WednesdaySummer garden tomato sauce pasta from syrupandbiscuits.com would pair nicely with some grilled chicken or steak (even by itself it’s a lovely meal!) and a nice simple side salad drizzled with balsamic vinegar and olive oil.

Thursday – Leftovers for us!  The pork is just way too much for my small family to eat, so I will make a nice salad and serve it on top!  I’ll probably make some quesadillas for the kids, too! 🙂  The post for the Pressure Cooker Carnitas also has some fantastic ideas for leftover as well.  Make sure to check it out.

Friday – Pizza from our favorite local pizza place! Or try my grilled pizza recipe!  I promise you, the best pizza you’ll ever make at home!
