Family Friendly Meal Plan for the week of July 16, 2018

My goodness, is it already mid-July? Am I the only one, or is this summer flying by WAY TOO FAST? Ugh, as much as fall is my favorite season, I’m not at all ready for it to come. Anyway, with another HOT (and humid) week in the forecast – oh, along with jury duty – I’m using rotisserie chicken (maybe 2) as the backbone of this meal plan. Rotisserie chicken four ways is what this post should really be called 🙂 In all seriousness, I think the protein could probably swapped out in a meal or two if it is chicken overload for your family. I just need something relatively easy because we’ve got a super busy week ahead!
Monday – With 90 degrees forecasted here all bets are off and I’m going with this Apple Cranberry Walnut Salad from lecremedelacrumb.com. Yeah, yeah, I know this goes against the pushback against summer flying at warp speed, however my family loves apples and this is surely going to be a hit. I’m going to top ours with some of that rotisserie chicken for a complete meal!
Tuesday – Being married to an Italian, we’ve got to have some kind of pasta in our weekly meal plan! This week it’ll be this Roasted Corn Chicken Orzo salad from littlespicejar.com. We’ve got a trip planned to go to the zoo with our cousins, so it’ll be something easy to prep ahead of time! Plus leftovers will be awesome for later on in the week! Update: this recipe is SO GOOD! So, so good! I put a little to the side (for the kiddos) before adding the poblano pepper. The flavors are awesome and I’m definitely making this recipe for my next family gathering.
Wednesday – Taking a break from chicken, but not from flavor, are these Avocado Caprese Wraps from foodiecrush.com. I am absolutely IN LOVE with this flavor combination, so is the hubby (and shockingly Baby A – she could eat tomatoes ALL DAY LONG!).
Thursday – Chicken is back on the menu today and we’ll be having these Chicken and Avocado Burrito Wraps from Gimmedelicious.com. We’ve had these before and they are DE-LICIOUS and only a few ingredients! Plus, we’ll be able to use up a little of the cilantro from earlier in the week! I may end up making my rice cooker cilantro lime rice recipe to go with this as well!
Friday – As always, pizza from our favorite local pizza place! Or try my grilled pizza recipe!
