Easy Peasy Three Bean Salad

Hi Friends!

Summer is officially in full swing here and I couldn’t be more excited!  It’s such a fun time of year, especially here in the Northeast! I absolutely love BBQ’s, picnics, meals on the porch outside…eek, I’m so happy thinking about the weeks and months to come! 🙂

Anyway, as I sit here and dream of the lovely weather and good times upon us, I wanted to share this SUPER duper quick and easy recipe.  Nowadays I can’t get quick enough because Baby A and Baby G are into everything and their fun-tastic witching hour is precisely as I’m making dinner 😉

Hubby has a potluck lunch at work tomorrow and will be bringing this dish.  It keeps amazingly well and is a pretty healthy dish to bring to a potluck-type gathering.  With just a few simple ingredients that are most likely already in your pantry or fridge you can whip up this delicious dish!

Easy Peasy Three Bean Salad

This quick and easy three bean salad is perfect for a summer BBQ, potluck or lunch or dinner side!

Total Time 10 minutes

Ingredients

  • 1 16 oz. can dark kidney beans
  • 1 16 oz. can white or cannellini beans
  • 1 16 oz. can black beans
  • 3/4 cup chopped red onion
  • 3/4 cup red bell pepper
  • 3/4 bottle Ken's Lite Northern Italian Dressing with Basil & Romano
  • 3 tbsp balsamic vinegar

Instructions

  1. 1) Rinse and drain beans.  

    2) Place beans in large bowl with chopped onion and red peppers.

    3) Pour dressing and balsamic vinegar over beans, onion and red peppers and toss well to coat.

    4) Chill for 2-3 hours before serving.

Recipe Notes

  • This recipe can easily be doubled or tripled to feed a crowd!
  • You can definitely make this recipe the night before and store in an air tight container in the fridge.
