Delightfully Delicious Healthy Egg Salad Recipe

Hi Friends!

How is your week going?  Mine has been flying by with all fun, busy things!  Are you excited for Halloween?  I know my kids are super pumped – Baby G keeps babbling and pointing at his little pumpkin costume…it is really the cutest thing ever!  Baby A will be Sophia the First and can’t wait to wear her amulet!  Oh, the innocence and sweetness surrounding these two 🙂  This is truly a fun time of year!

This morning before weigh in I opened my fridge and saw two lonely hard-boiled eggs staring me in the face.  What’s a girl to do, but prep a healthy, delicious lunch!?  I think that prepping this morning and putting in the fridge really helped mix all those delightful flavors together.  I was super happy eating this sandwich today and couldn’t wait to share with you!  As I’ve mentioned in my weekly meal plans, I’m on a mission for healthier eating and losing the last few pounds of baby weight.  So this recipe is easy, delicious, and if you’re counting weight watchers freestyle points – 0 points! Hi Friends,

Ooooh, what a weekend here in the Northeast!  Baby A wasn’t feeling well and we had some terrible weather on Saturday.  Nothing got done that should’ve gotten done, but that’s ok.  We had some snuggle time and were able to relax and not leave the house!  I hope you had a lovely weekend surrounded by those closest to you!

Honest truth, in my twenties I thought people who had children back-to-back (read: those raising two under two) were crazy.  Coming from a family where there are two of us, and a twelve year age gap between us, there was no way I was going to have two children so close in age.  What’s the saying: Man plans, God laughs?  Well, that was definitely the case with me.  Little did I know, or realize, that not getting married until my 30’s would lead me to a place where I actually would want to be raising two under two.

Hi Friends!

Happy Sunday!  How has your week been?  Ours has been a little hectic, but fun!  Among all of our activities, Baby A had a pasta dinner at her school last night.  It was so much fun meeting other parents at the school and getting to know some of the parents of her classmates.  Baby A’s older cousins also attend the school, so she had a lot of fun hanging with them as well 🙂   I thought she’d pass out when we got home, nope, she was wired…and still woke up at 7 am!

Family Friendly Meal Plan for the week of October 15, 2018

Hi Friends,

How is everyone’s weekend?  I hope you’ve all made some wonderful fall memories with your families!  We’ve had a rather low key weekend given the weather here wasn’t so great.  It has gotten so cold so fast!

Truth be told, I do my meal plans one week ahead of posting.  The reason for this is to make 100% sure I love the recipes!  I would never recommend a recipe we didn’t like or that my family wouldn’t eat (same goes for any products I recommend on my blog!  I’d never ever recommend anything I didn’t approve of 100%!).  Anyway, last week was seasonably warm here in the Northeast so you’ll see a Cobb Salad on the meal plan.  This salad is SO GOOD and depending on the dressing you use (I just mist olive oil and a bit of balsamic vinegar) it can be as little as 3 Freestyle points for a HUGE dinner salad!  I love Cobb Salad and hope you like my version of it!  Other than that the meals are SUPER good!  The meatballs were awesome, my husband gave it two thumbs up!

I love the Fall, it is by far my favorite season!  There’s something about Harvest time that just gives me the warm and fuzzies all over!  Last year we were basically sick from mid-October through April, so needless to say Baby G’s first Fall was a bust, so this year we are trying to make up for it with lots of Fall Family Fun!

Hi Friends!

Is it me or did this summer go by WAY TOO FAST?  As a matter of fact this entire year has seemed to go by at the speed of light!  How is it October already???  At the end of August Baby A started Preschool!  My lovely, sweet little girl has had a taste of what it is REALLY like to be a big girl and I think she’s enjoying it!  I knew as soon as she started school, however, something was going to have to change – my “fly by the seat of our pants and do as we please” mentality would clearly need to go out the window.  We would HAVE to adopt a back to school routine!
